History of Mac n Cheese

The earliest documented recipe for macaroni and cheese was written in Northern Europe circa 1769, but the exact origin is unknown. Thomas Jefferson brought mac and cheese to the US from France. Jefferson was known to have been infatuated with French pasta dishes. So much so that he would bring back items such as noodle recipes and a pasta machine, which were all new in the Colonies at the time. In an 1802 state dinner, the serving president served up macaroni and cheese as one of the courses.
